6 Sheet Pan Recipes I’ve Been Cooking on Repeat

I love sheet pan recipes because they are so easy, you just prep everything and cook. It also makes it much easier to cook tofu because sometimes when I make tofu stir fry I end up using too much sauce or the tofu gets stuck to the pan and clean up takes almost as long as cooking. Some of these recipes call for stir-frying, but I’ve found that if you marinate the tofu and veggies then roast for 20 minutes, check on it and flip the tofu and veggies, then roast for another 20 minutes you’ll be all set! You can marinate the tofu and veggies for a few hours or even overnight.

Vegan Sheet Pan Fajitas: These Vegan Sheet Pan Fajitas from From My Bowl are so good. I’ve been using Sky Valley’s Organic Fajita Sauce and Trader Joe’s Chile Lime Seasoning Blend.

Tofu Burrito Bowls: I modified the From My Bowl recipe for burrito bowls using Texas True BBQ Sauce. I seasoned the portobello mushrooms, bell peppers, onion, and sliced jalapeno peppers with Trader Joe’s Chile Lime Seasoning Blend. I have the bowls with either quinoa or brown rice. You can add salsa, cheese, black beans, guac, and anything else you like in your burrito!

Tofu Teriyaki Bowls:  I modified the From My Bowl recipe again for teriyaki bowls. I used my favorite Soy Vay Teriyaki sauce and made it with broccoli, bell peppers, shitake mushrooms, and onions. I have the bows with either quinoa or brown rice.

Tofu, Eggplant, and Broccoli in Garlic Sauce: I modified this recipe from Healthy Gluten-Free Family by adding tofu and subtracting the bok choy because I couldn’t find it. It is really good!

Roasted Veggies With Tahini Sauce: I love making Mediterranean-inspired dishes and like making a big batch of roasted veggies for a week’s worth of salads and quinoa bowls. I have been using this recipe from Pinch of Yum. You can modify it based on what you have on-hand. I like using root vegetables like sweet potato, carrots, and butternut squash, as well as cauliflower or broccoli, olives, Brussels sprouts, onions, and garlic. I like to add lemon juice, olive oil, paprika, cumin, and salt before roasting it. I also make this homemade hummus and this that is better than store-bought hummus and is so easy to make!

Spicy Peanut Tofu Bowls: This recipe from Pinch of Yum is definitely better than take-out! I absolutely love peanut butter and peanut sauce!
