6 Recipes I’ve Been Making on Repeat

I’ve been cooking all of my meals while we are social distancing to “flatten the curve.” If you are in NYC, I recommend using FoodKick for grocery shopping. Here are five recipes I’ve been making on repeat!

Homemade Hummus: I couldn’t find hummus when I was grocery shopping on FoodKick one week so I made my own using this recipe from Inspired Taste. I sprinkled in Trader Joe’s Everything But the Bagel Sesame Seasoning Blend. It is so good! I put hummus in my salads and have it with olives, cucumbers, carrots, and pita chips for a snack.

Smoky Roasted Chickpeas: I like making this spicy chickpeas recipe from Cooking Light with cayenne pepper and smoked paprika as a salad topping or a snack. The seasoning blend is also great for a big batch of roasted veggies.

Tahini Vinaigrette Salad Dressing: I love making Mediterranean salads or quinoa bowls with chickpeas, olives, feta, capers, pita chips, sundried tomato, carrots, cucumbers, quinoa, and paprika. This salad dressing recipe from Live Simply pairs with it perfectly and is also great on roasted veggies.

Mediterranean Zucchini Pasta Salad: Clearly I’ve been craving Mediterranian-inspired dishes! I love this simple, light zoodle recipe from A Beautiful Plate. I’ve been making it with pesto.

Beyond Beef Bolognese: I have been making a modified version of this Kitchn Beyond Beef Bolognese with spaghetti, penne, or zoodles. I’ve been making an even easier version by taking Rao’s Homemade Marinara Sauce and mixing it with the beyond beef crumbles.

Pesto: I love this simple pesto recipe from Gimme Some Oven. I like having pesto on pasta, quinoa bowls, and salads.
