Chocolate Peanut Butter Granola Bar Recipe

These chocolate peanut butter granola bars are so good. I love this simple chocolate peanut butter granola bar recipe and you only need 7 ingredients to make these granola bars. If you want to get super fancy you can add extra ingredients like pecans, peanuts, or dried strawberries. I recommend using the coconut oil because it makes the granola bars crunchy. I made half as granola bars and half as granola for snacking, yogurt parfaits, or sprinkling on ice cream.

-3 cups (240g) old-fashioned rolled oats
-3 Tablespoons (16g) unsweetened cocoa powder
-1/2 cup (125g) creamy or crunchy peanut butter
-1/3 cup (113g) honey
-1/4 cup (60ml) coconut oil
-1 teaspoon vanilla extract
-1/2 cup (125g) pecans

Optional:
-1/2 cup (90g) chocolate chips
-melted peanut butter for drizzling

Granola Bars:
1. Preheat the oven to 325F.
2. Line a large cookie sheet with parchment paper or a silicone baking mat.
3. Mix oats, pecans, and cocoa powder together in a large bowl.

4. Melt peanut butter, honey, and coconut oil together in a medium bowl and stir until smooth.

5. Mix in the vanilla extract.
6. Pour over oats and mix until all oats are moistened.
7. Pour the oats on the cookie sheet and pat it down so that it is evenly distributed.

8. Bake for 30 to 35 minutes.
9. Remove from oven and leave it out to cool for 2 hours.
10. Melt some chocolate and peanut butter and pour them on the granola bars. I put them in the fridge so that the chocolate and peanut butter would solidify faster. If you don’t pour the chocolate or peanut butter on, you could also use a spatula.
10. Using the parchment paper overhangs, transfer the granola onto a cutting board and slice it into bars.
11. Store the granola bars in an airtight container at room temperature for up to 1 week, or in the freezer for up to 1 month.

Granola:

8. Remove from oven and, if you’re adding chocolate chips, sprinkle the granola with them while it is still warm. Stir. The chocolate chips will melt, creating larger clusters of granola.
9. Allow to cool at room temperature for at least 30 minutes. The air will help the granola get crunchy. Store covered at room temperature for up to three weeks. Serve with a drizzle of melted peanut butter if desired. (AKA Definitely)
