One of the items on my Fall in NYC list was to go to a cooking class so I signed up for the Cooking Creatively From the Fall Farmer’s Market course at JCC Manhattan. I went with my friend, my mom, and my mom’s friend. We learned to make so many healthy meals. I love walking through the Columbus Circle Farmer’s Market or the Union Square Farmer’s Market and now I know a lot of recipes I can make (other than salads, lots and lots of salads). The teacher, Irene Yager, was great. We each made a dish but Irene taught us the right techniques to use to make everything. We made: Brussel sprout slaw; roasted brussel sprouts; acorn squash stuffed with autumn pilaf; raw beet salad with honey lemon vinaigrette and walnuts; balsamic glazed root vegetables; flat bread pizza with caramelized onions, pear, and goat cheese; cauliflower steaks with olive pistou; leafy greens with warm white beans, eggplant, peppers, zucchini, and onions; and apple and pear crisp. I absolutely recommend taking a cooking class at the JCC.
