I haven’t done one of my Girls Night In posts in awhile and it isn’t because I haven’t been cooking. I’ve been cooking a ton but it doesn’t always look as pretty as it tastes. I’m definitely not a chef or a food photographer but I’m having fun trying.
Right now my go-to is a mediterranean salad and anything spaghetti squash. Full Disclosure: My roommate is an amazing chef and she made the spaghetti squash this time… I just heated it up and added parmesan cheese.
My favorite mediterranean salad is made with kale, chickpeas, mixed olives, sunflower seeds, cucumber, carrots, tomatoes, and feta. I like eating it with olive oil and vinegar.
The spaghetti squash is made with sautéed mushrooms, broccoli, garlic, and parmesan cheese.
I am trying to eat healthier and cooking at home more often is a great start. I also pack a salad for lunch every day.
